30 minute Creamy Tomato Burrata Rigatoni

The perfect quick and delicious weeknight meal. This fresh rigatoni is sure to become a family favorite.
This recipe features many of my favorite ingredients: rigatoni (arguably the best macaroni shape), cherry tomatoes, garlic, olive oil, basil and BURRATA.
Making your own homemade sauce with cherry tomatoes could not be easier. All you need is extra virgin olive oil, MANY cloves of chopped garlic, crushed red pepper, cherry tomatoes, salt, pepper, and heavy cream. The best part is that you don’t even have to slice the tomatoes. You can throw them right in the pot!
Now let’s talk CHEESE. Burrata is such a crowd-pleaser and it adds such a beautiful creaminess to this dish- the perfect juxtaposition to the acidity of the tomatoes. If burrata isn’t your thing and you want to try a different kind of mozzarella, I recommend smoked mozzarella. Smoked fresh cheeses adds a depth of flavor.
If you wind up with leftovers, they reheat very well in the microwave or stovetop. Hello, next day lunch!
30 minute Creamy Tomato Buratta Rigatoni
Ingredients
1/3 cup extra-virgin olive oil
10 garlic cloves, sliced
2.5 pints cherry tomatoes
1 tsp. red pepper flakes
2 tsp. kosher salt
1.5 cups heavy cream
1/2 tsp. freshly cracked black pepper
1.5 lb rigatoni
2 8-oz. balls fresh burrata
1/2 cup fresh basil leaves, chopped
Instructions
Heat oil in a large skillet over low. Add garlic and cook until fragrant and slightly golden, about 2-3 minutes.
Put heat up to medium and add tomatoes, red pepper flakes, and salt. Cook, stirring occasionally, until at least half the tomatoes break down, about 10 minutes. Stir in cream and black pepper; reduce heat to medium-low.
Meanwhile, cook rigatoni according to package instructions in salted water until al dente. Reserve 1/2 cup pasta cooking water and drain remaining. Transfer cooked rigatoni and reserved pasta water to skillet with tomatoes and toss continuously until sauce is thickened, about 2 minutes.
Break burrata balls into pieces and disperse evenly over pasta. Remove skillet from heat and garnish with basil.
