Almond Butter Date Balls

Chocolate is one of the four ingredients in this recipe, so clearly it’s V Day appropriate.
If I’m running around like a “chicken with my head cut off” (most of the e time this was my status pre-pandemic) I would carry these around with me to make sure my blood levels never dropped because of starvation.
I am more susceptible to making non- optimal food choices when I’m famished, so these balls are the cure.
My recipe calls for almond butter, but you can use any nut butter you want. I love peanut butter or cashew butter too! For my nut free peeps, I use sunflower butter. YUM.
Almond Butter Date Balls
Ingredients:
1 cup Medjool pitted dates
1/4 cup all natural almond butter
pinch of sea salt
2 tbsps dark chocolate chips
Instructions:
Add the dates to a food processor and blend until mostly smooth. Add the almond butter and salt to the date purée and blend until combined. Add the chocolate chips and pulse until incorporated.
Form the dough into 1-inch balls. Place on a parchment-lined plate or tray. Repeat until all the dough is used up.
Freeze the balls for at least an hour until firm then transfer to an airtight container and keep in the fridge or freezer. Enjoy!
Have Leftovers?
Refrigerate in an airtight container for up to one week. Freeze for up to two months.
Nut-Free?
Use a seed butter like sunflower seed butter or pumpkin seed butter.
Want Extra Flavor?
Add vanilla extract, cinnamon or more chocolate chips.
