Death By A Thousand Eggplant Cutlet Garlic Bread
I saw the chicken cutlet version of this recipe that Diane Morrisey posted on her feed and I thought, “I HAVE TO VEGETARIANIZE THIS!”
So, I watched what she did and added an eggplant spin. If you are short on time you can buy a premade ciabatta garlic bread that you know is AMAZING and you can buy your favorite jar of sauce if you don’t make your own. I recommend using ciabatta bread for this recipe because you want a bread that has a large surface area.

I named this after Taylor Swift song since I served it on Super Bowl Sunday. It’s called… “Death By A Thousand Eggplant Cut-let Garlic Bread.” This recipe is great for Super Bowl Sunday or just regular Sunday or everything in between. Enjoy!
Death By A Thousand Eggplant Cutlet Garlic Bread
Adapted from Dianne Morrisey’s Chicken Parm Garlic Bread
Ingredients:
1 loaf of garlic bread, ciabatta bread sliced in half
1 cup marinara sauce, divided
1/2 lb eggplant cutlets, sliced into 1/2 inch think pieces
1/2 cup grated parmesan cheese, divided
8 slices of sliced provolone cheese
1 cup low moisture shredded mozzarella cheese
1/2 cup pesto, divided
1/4 cup fresh Italian parsley, finely chopped, divided
Instructions:
Preheat oven to 350 degrees F.
Place open faced garlic bread on parchment lined baking sheet.
Spread 1/4 cup of marinara sauce evenly on each slice of garlic bread.
Add slices of eggplant cutlets evenly on each slice of garlic bread.
Spread another 1/4 cup of marinara sauce evenly on top of eggplant cutlets.
Sprinkle 1/4 cup parmesan cheese on each slice of garlic bread over the marinara sauce.
Layer 4 slices of provolone cheese on each garlic bread
Place Eggplant Cutlet Garlic Bread in the oven at 350 degrees F for 15 minutes or until cheese is cooked and bubbly. Optional- you can put under broiler for 2 minutes or until cheese is slightly brown.
Remove bread from oven and top each half with 1/4 cup pesto and 2 TBS parsley .
Slice bread Into 1-inch pieces and enjoy!
